Tile is always a good go to for back splash.
White subway are a classic. If using tile, I like to stay as classic as possible. With the busy oak wood of the cabinets, I would go with light and simple on the backsplash.
It really depends on the look you want, anything from basic white tiles to black to metallic etc. it is usually better to err on the conservative side unless the backsplash area is small or is a spot you want to make a focal point. Just go to a tile store and find something in your price range that looks good to you. take a few samples home. Or browse home decor magazines or books at the library for some inspiration.
Black would look rich, so go for a "glass" tile which has some black in it and picks up the grey of your counter.
