Do I have to take down the 12 x 12 inch ceiling tiles?
Has anyone found a way to cover the joints of 12 x 12 inch ceiling tiles so that you could use wallpaper on the ceiling? Or am I stuck with plasterboard or ship board as my only hope?

THERE IS A THICK WALL PAPER LINER YOU CAN PUT OVER THE TILES, THEN YOUR WALL PAPER. I love wallpaper on a ceiling.
Wall paper won't stick to the tiles.
some of the re-do will depend on what is BEHIND the ceiling tiles ... IMPO, I think I'd remove them and just sheet rock the ceiling, tape, mud, sand and then put what ever you want on ... wallpaper is interesting ... https://www.hgtv.com/design/decorating/design-101/how-to-hang-wallpaper-on-the-ceiling
To use shiplap you'll have to be sure there is sufficient support for it as well as the sheet rock ... but the wood will be much heavier I think
