How do I protect my grey town barn wood without changing the color?
so I took some windbreak off the corral to finish up my little mud room project and I’m wondering it there’s anyway I can seal this grey wood without changing the grey color to were if I set something wet on it it won’t leave marks? Thanks.

Use a Matt finish spar varnish.

You could use a matte finish sealer on it, although it might change the color a little bit, it shouldn't be much. Try doing a practice piece with another piece of painted wood to make sure you like the results. Wishing you the best.
I agree a Matt finish you can paint on will help you out an dgive the look and protection you need.

Have you thought of trying the "butcher block sealer" on this wood? Whatever you do, use a scrap and try out the product.
Matte or satin finish Helmsman Spar urethane. Matte or satin finish water based polyurethane. Don't use a oil products. Would need to be reapplied every so often.
I’ve used the Helmsman spar urethane on several painted wooden projects. Turned out great. I prefer the satin finish as it reflects a little light and keeps a good tone. Matt finish will sometime make a piece appear darker.
