I dyed some head & wrist sweat bands yellow with some Rit dye, so I could be Paullie Bleeker for Halloween one year.
I know it's not exactly on the scale of a seat cover, but the directions for washing machine dying were simple enough, and the results were great. Colors didn't bleed at all.
If you can't get the seat fabric in a washing machine or some other large-ish tub, the aerosol stuff is probably going to be your best bet.
I've seen the parts store aerosol dye get stuff close enough that most wouldn't notice a difference without really looking, but the gray I've seen might be easier to match than black, especially if the black is faded.
Or you could use fabric paint.

Do you know that you can paint fabric? There are websites online that tell you how, I am going to try it on some chairs I have.
I have heard it from other people but don’t quite understand how it works. What will you be painting with fabric paint?
