I tried to find the answer to that center section question! Didn't find a traditional use! Came up with all sorts of ideas! Pickles! Radishes! A small vase with flowers! Whole colored eggs! I guess it's up to you!
Most traditional egg dishes I've seen have just been decorated in the center, some plain, others have no center. My grandmother had one with a center that she used for small salt and pepper shakers. If I remember right, the design on the shakers complimented or matched the dish.
Garnish or some small dish that compliments the eggs is the purpose of the section. There are no rules but I thin it's super cute to put a bunny or chick for Easter decorations. Sometimes I put my salt & pepper shakers there so they are handy and don't take up additional space.
