Ester: if you use it as a container garden, you'll have to drill in some drainage holes on the bottom
There is no reason why you cannot use it for a planter but be sure to put a hole in the lower side for drainage, about 3 inches up from the bottom. I am suggesting this because the space between the bottom and the hole will act like a reservoir.
Most bigger coolers have an opening for drainage already, so they're perfect for planters. If you don't have a built-in drain in the cooler but don't want water leaking all over the place, another option is to lay about a 1-inch layer of sand, cover that with some small stones or gravel, then lay in your soil and plants. The sand and gravel will absorb the water, keeping the roots from rotting, and you won't have to water plants as often. You can also put plants inside the cooler in individual pots, using the cooler as the drainage reservoir for any water that leaks out of the pots. The biggest mistake people make with container gardens and planters is over-watering. I never drill holes in anything for drainage, and haven't had any root rotting problems.
You could make it into a garden pond.
Use it for storage
I'd use it as an ice bucket to keep drinks cold for parties
