No matter which one you do, you start with cleaning thoroughly. You'll want to remove all dirt, drips, etc from kitchen use. If there is a sealer on the wood, that will need to be removed if you want to stain it. To stain, follow the directions on the can. Just remember that you can only stain darker unless you sand off all of the current stain. For painting, clean first, then I'd suggest a good primer before painting to make sure that it won't peel. You can use a brush and/or a roller, depending on what works. It's best to use 2-3 thin coats that 1 thick coat. If you have more questions, feel free to let us know. Wishing you the best.
