I would like to paint or coat the entire interior with something that is non-toxic but will prevent leaks.

Since kitchen sink water is soapy water most of the time going down it, you probably have bio sludge.
I would use a whole bottle of septic tank enzymes, only if I’d not used vinegar nor Drano on it recently.
The enzymes need to live long enough to eat the sludge.

I use baking soda and vinegar. Start with about 1/2 cup of baking soda, then pour in about 1 cup of vinegar. Let it sit 10-15 mins until it stops "working". Once it stops, pour down a quart or two of hot water - even more is good. The baking soda and vinegar will dissolve the organic clump in the drains. Wishing you the best.
