I’d use A/B plywood and they’ll cut it down for you with their panel saw. So it will be any size from 4’x8’ or smaller.
I’d use 3/4” so that you can put a nice hardwood edging on it.
It can be screwed from the bottom into the new top (upside down).
It can be stained, painted or just sealed.
A/B Plywood comes in other species like alder, birch, oak and maybe poplar.
