Hi Andy. I'm Cindy. It's called Shiplap. A lot of people are using pallets to create shiplap on walls. I like it when they paint some of the boards, and stain some of the boards. Different colors of paint and stain. I saw a project here on Home Talk where someone did the entire wall behind their bed. It looked great. Good luck Andy.
One thing you'll want to consider is that when you add thickness to your wall (I'm assuming you're going over drywall?) you're going to have to extend your light switches and electrical outlets so they are flush with the new wall surface.
