I usually sand and wash down well and put a coat of oil based poly on shelves. It keeps them very nice.
Paint them. Contact paper. Shelf paper.
Contact paper...or paint the shelves with white enamel paint...easy to keep clean and washable.
I used some leftover stick on vinyl flooring squares to line my cabinets. Very easy to keep clean. Works especially well in under the sink cabinets both kitchen and bathroom.
