You can but it's harder to paint the cabinet boxes around the doors and the hinge side of the doors. It is much better to take off the doors and the hinges before you paint. You will end up with a nicer job.
Hinges and some of open doors would be in the way of prep and paint. Doors also would need to be kept open for paint to dry. Easier and better to remove the doors. You get a better, cleaner, and smoother finish.
