They sell large beadboard panels at home improvement stores. If you cut it to size with a table saw or jig saw you can adhere it with construction adhesive and then paint it. You may have to add some 1 inch round trim on the edges.
Backsplashes must be finished so that they are water resistant and water spots can be cleaned without ruining the water-proofing finish.
Whether or not you use semi-gloss or gloss latex enamel or use “spar” type polyurethane, you’ll want to finish the edges before assembly, so that water resistant finish is in the cracks, cuts & seams.
I painted mine after I installed it. Just taped the counter top off. I used Loctite powergrip for the adhesive for the beadboard, then trimmed all of the edges with 1/4 round.
