The most difficult part of this will be removing the cabinets that your built-in sits in. Most cabinets are screwed to each other through the face frame. They usually are also screwed to the counter from underneath and through the back wall to the kitchen wall. The countertop will also need to be trimmed and given a finished edge where the new range will slide in

I would suggest replacing that broken cooktop, or whatever its issue is, with a new one,
You would have to take out the counter and the old stove the whole space needs to be cleared and fixed so the new stove will slide in

Sometimes the countertop has finished edges surrounding the built in, other times they are rough cut. If yours are not finished off you may need to do something to mitigate that or consider a stove that has a lip that will hide it.
