Hi Melissa, polyurethane will always yellow over time so putting it over a white paint can be dangerous as it will end up looking creamy or yellow after it sits for some time. You could use a polycrylic which is water-based and that does not typically yellow. General Finishes has some great products for cabinets and they have topcoats made for them. They would be a good place to check.
You need a polyacrylic to seal your cabinets, Minwax also has a good product.

Polyurethane will yellow white paint. You could use a water based like polyvine but your best bet is to use an enamel based paint like RustOleum where no coating will be required.

Water based Polyurethane will work. Goes on milky, dries clear, does not yellow. Oil based poly has a yellow cast to it and will yellow over time. Minwax is my go to
You can, just make sure it's a water based one so it won't yellow or seek out alternatives that will provide hard-wearing protection without yellowing.
If you use a good paint like Behr or one of the brand name paints for your cabinets you won't have to worry about it but cheaper paints will not cover as well and some will yellow or darken over time. Use Sherwin Williams or Behr for wood or whatever your cabinets are made out of
If you use an acrylic paint from Sherwin Williams or Benjamin Moore you will not need a top coat. You will have to use a primer no matter what paint you decide to use. And if you have a paint sprayer the cabinets will be drip free.
