How do you remove a fur down over a tub, a shower and kitchen cabinets?

Then after removal, how do you put in a new wall and ceiling?

Do you have to put the green sheet rock in and then regular sheet rock over that?

The green dry wall should be a moisture tolerant one. You should not need to put a regular sheet rock over it. Not understanding “fur down“ ? Post a picture please?

If you mean 'soffit' you need to find out if any duct work or other services are encased in them and redirect them if possible, typically at considerable expense. Type of sheetrock or drywall depends on the room and location. Might be best to call in a licensed contractor for at least a consult. If ducting or utilities need to be relocated, typically a permit needs to be pulled and work performed to local code.
