Measure the opening, and get shutters the size you need. You may need three across according to the height. Use hinges to attach them. Good for you at 75! I'm 73 and can do this - slower, granted, but it'll get done.
some have used shutters. you might try a roller shade. a small shelf with baskets or other storage on it might also be a possibility. just suggestions. good luck.

Perhaps if you measure the space you can find a small bookcase that would fit underneath, or purchase stack-able shelving from Bed Bath and Beyond. That way you can make it look like it was customized for your space.
You could pick up some small wire shelving units like this that fit under the cabinet. Good storage for towels and you could also add baskets and store things in the baskets. They are inexpensive and easy to put together. They are sturdy. Look in the area of the store where you would find shoe rack storage--even a tall wire shoe rack would work.
