Under the sink? Use a curtain or shower curtain cut to size and glue at the top under the sink edges. You can then access the pipes by pulling the curtain aside at the back. If the pipes are in the room in a corner, build a two or three-sided box to enclose. Paint or paper the wood.
If you are living in an older house and the pipes go from floor to ceiling, I would paint them the color of the wall. I wouldn't hide them as they are part of the character of the home.

If they are floor to ceiling, you could go wild depending on your style. Paint the pipes the color of plant stalks. Paint flowers on the wall/ceiling. Or mod podge fabric flowers onto the wall. Wrap them in fabric. Put a storage tower in front of them.
I made a skirt that coordinated with my shower curtain. I put cup hooks in the wall on either side and used wide elastic to stretch around the sink.
A picture of the pipes and your bathroom would be helpful. Are the pipes on the wall, or under a sink? Without seeing what you are working with you could paint them the same color as the walls and ignore them, or, paint them a contrasting color and make them a feature. If under a sink, you could make a fabric skirt (attach with velcro).
