Use Cedar, it will last the longest and will not contaminate the vegetables. NEVER use things like used railroad ties or pre-treated wood - they are full of harmful oils, etc.

I would stay away from treated wood if you are making raised beds for vegetables. For a vegetable garden I would use pine or cedar. When I made my tomato gardens I used 2 x 10's for the sides and they have lasted for at least 10 years before I needed to replace them. Make your garden a rectangle shape so that you can reach from side to side. I also pull black garden/landscape fabric over the top of the raised beds, securing the fabric on the edges with lathe and screws to hold the fabric in place. I only plant tomatoes and peppers so it works well. I then cut holes where I plant the tomato/green pepper plants and secure the fabric down right away with tomato cages around the plants. I have little to no weeding that way. I replace the fabric every year. I also put large cement sidewalk blocks down in between my two gardens or you could use more landscape fabric and pea gravel or mulch.

You could always use concrete blocks instead. They'll never deteriorate or rot which eventually any wood, even treated wood, will not last forever.
