Put your racks in a large garbage bag. Sprinkle some baking soda on them and then sprinkle in some white distilled vinegar. Let them soak overnight. In the morning take them out of the bag and rinse with warm water. If the racks are really bad add a couple squirts of Dawn dish soap. I usually do this job in the summer when I can put the bag outside.

Put the racks into a big black garbage bag in your back yard. Pour in two cups of ammonia, tie the bag to close tightly. Let it sit there till night time. Flip the bag over. Let it stay over night. In the morning open carefully and drain well. Rinse well and dry them before you put it back into your oven.

If you have a bathtub, sometimes it makes it much easier to clean them in there!
