Are you going to cover this wood with tile? If not, you can use a moisture proof sealant like AgraLife TriCoPolymer KS128 Non Toxic Clear Kennel-seal. You don't mention whether you're using board. If you are, apply a clear to any noticeable cracks before applying top coat of sealant. If you are using tile, cut plywood to the size you want your back splash, nail or screw it to wall making sure your fasteners go into studs. Make sure it sits flat against the counter top. Then apply tile from the bottom up using thin-set, and caulk or grout the cracks.

You might condier using bender board. It will give you a wood look that can be painted, but it will be thin so it will not stick out as far as regular wood would.
