I love using a foam cutting Matt with a plastic cutting ruler and cutting wheel -

What are you making? Generally, I have used a table that is big enough that the fabric is not draping off it. If you are cutting sheer fabric, make sure the grain is straight, then if curtains- pull a thread for a guide. If for blouses, use the tissue paper sandwich method and a rotary cutter and mat. For most other things-- sharp scissors/shears and pay attention to the job and don't rush it. -

My grandmother used to pull a string out which left a perfectly straight line in the fabric. She used it to mark the fabric and as her cutting line. You just made me think of this. Sometimes old ways are good ways. -

Make sure the fabric is laying flat, iron it if you have to. Don't pull on the fabric when you are marking or cutting the fabric, or pinning a pattern to it. -
