Sheets of drywall or mud for small repairs? For repairs use the drywall mud the same as for sheet drywall. If wanting to replace plaster walls with drywall, best to remove the plaster and lathe. Walls would be too thick if you just glue on the drywall boards to plaster, especially for plugs.
Need more info. Why do you need to drywall over your plaster walls. Are they really that bad. Pictures? Have you considered repairing and or skim coating the old plaster. Drywall over old plaster reduces the reveal on all of your door and window trim as well as your baseboards.
You don't. Plaster and lathe would need to be removed down to the studs. Plaster walls are not 100% smooth and drywall may not lay on properly. Screwing drywall can crumble the plaster. Plaster walls are not all the same thickness. You would be dealing with modifying baseboards, door and window trim, electrical, etc.
