PAINT! When you paint wood paneling (a coat of primer and two of a color) the wall takes on a clean modern look -- with a bit of texture! Use a light, neutral color to really lighten a room --- it'll look larger too!
Angela...I just painted mine, however, it is in the basement. I used a Kilz primer then two coats of paint. I did not fill paneling grooves but that can be done (just a little more work than I wanted to do)

You can also stencil paneling. I had a light gray panel in one home, and I found a stencil with hearts, leaves, flowers. I did not use spray paint because it was in my living room, and I just got small containers of paint and put it on with small brushes much like you would paint a picture. It looked lovely and made the paneling appear completely new and fresh.
