This won't be easy but will correct the issue. http://homeguides.sfgate.com/fix-uneven-drywall-24717.html.....then do the wood on the other walls
There is a wallpaper liner that evens out walls. I actually saw it today on sale at an online wallpaper store; Steves Blinds & Wallpaper. But what's under the paneling? Most paneling has been installed over wallboard or plaster. You may be postponing the inevitable by just covering. Take a peak under that paneling before you start anything.
Easy and cheap is usually inferior, as you have found. If you are going to cover the whole wall with wood, why not remove the old paneling? Removing it all and installing drywall, or repairing drywall or plaster that should be under the paneling, is the cheapest, but not easiest, and the right way to do a job that will make you proud and increase the resale value of your home.
