Paint it.
Have you got a picture, kinda hard to imagine without seeing what your dealing with, but in general a good coat of paint always makes it look better.
You can do whatever you want, it is still a door, even if it is not used. Do the same to both sides
I would just frame it in like a wall, put the outside siding on to blend in with the old, and the inside drywall, tape and mud, sand, primem paint. Add door moulding if needed to the remaining door side.
Treat it as if there were two identical doors!
