I would experiment on a scrap piece of wood. I have used tung oil to refinish furniture and generally never let a wet edge dry. If you stop at some point at the ends of flooring boards and make sure no oil gets on the boards you want to start with when you resume the project, then it might blend in, but it's a bit of a risk.
I would do it all at once. Professionals stain or poly the whole floor start to finish.
