How to care for perennials in the fall and winter in Massachusetts?

I live in Massachusetts I was wondering which perennials I need to cover in the fall or remove for the winter. I have a lilac bush, black-eyed Susans, daisies, oregano, spearmint, Rosemary, hydrangea, ajyssum, salvia, freesia, and I planted some lily bulbs, and miniature roses and two other types of roses but not sure they are larger. Please let me know and thank you for your time.
