For where it folds, the best option is commonly called a piano hinge, which is low profile and comes in almost any length. Placement of the hinge depends on whether you want it to fold down or up when open.You will need either some legs (attach with short hinges) or a narrow block on the opposite side to support it when horizontal.

Fold-Down Counter Adds Much-Needed Space to a Tight Kitchen
A PIECE OF WOOD, 2 OR 3 HINGES & WHERE you wanted it mounted. This will open like a locket when open & fold back when not in use. Place the wood where you desire it. Place the hinges where you desire them & with a pencil, indicate where the screw holes will be. Remove the wood & adhere the hinges. Replace where you desire it & screw them into place. Make sure the hinges are turned the right way for opening before mounting it.
Use hinges to make a flip up table. Check the weight limit.
