Without seeing what you have it is hard to answer. How is it anchored to the wall? It should be doable, just cut off. You may need to put a trim around it to make it look finished.
Sometimes the shelves will come out without having to cut. Otherwise I would say you can do it
I have cut bottom shelves off of my cabinets. It can be done, just need to work slowly and carefully. I used a small ceramic saw to do this as it has a small round blade that is easier to manipulate in the awkward position that you may need to be in to get to the shelf. Be sure to sand smooth and seal the side that will now be open. Good luck.
