Hi Kerry, Go to your local box store and ask for a masonry paint. It will take a while to get it covered and you'll have to use the right rollers and brushes to get into the cracks and grooves but you should be able to do it. Since it's in the kitchen, I would clean it really well first or kilz over it to keep the grease from messing with your paint. I would also see if you need to use a sealant (an exterior paint would probably work).

I had bricks for about 35 years...when I wanted to update, I painted them (a couple of coats) in semi-gloss paint. As my kitchen colors changed over the years, I changed color of paint. Easy to wipe down, since it was a semi-gloss.
Years ago we used waterproof sealant on our brick indoor walls. We are now painting them with latex paint mixed with water and applying the paint with rollers to create the mottled effect we wanted. Our walls look much better!

Before you paint all your brick in the kitchen, go buy a couple of bricks close to your color...and Experiment with whitewash, several colors (you can use samples of paint), and see which you like better. Lowes and Home Depot each have masonry paints and you can try an EGGSHELL finish or semi-gloss...or high gloss...put them in your kitchen and live with them a couple of days in all light situations...sun, under your lights, and in the dark...A couple of bricks can be painted on all sides differently, so you can get 4 GOOD size colors and 2 smaller on the ends.
I've seen peel flooring cut into ship lap. My friend parents put a few tiles for a shower on top. Good luck
