Paint is always an option. You could also remove it and maybe replace it with something? They make really pretty stick on backsplashes now that look incredibly like tile.
Hi Michellrae! There are many posts on Hometalk about painting and or plastering over the faux brick panels. It's amazing how real the "brick" look on most of them!
A family member actually had a brick wall in her kitchen after they added onto their house. She painted the yellowish bricks a bright brick red then painted the grout white, with her gloved fingers. I think she used an old jersey glove. She wasn't particularly careful or neat but it looked great!
First of all, i love the brick look. I would probably sponge on a little terra cotta or either grayish-taupe paint ( depending on tour color scheme) and try to make it look like weathered bricks. Look at the photo shared by William. Or if you HATE the brick, you can remove it or put up formica over it. Best wishes!

Add some glazing ? add some transfers ? Paint .. it all depends what you are going after ..
