Hi Christy, Put baton's on the wall and box the pipes in. Use cup and screw fixings so you always have access if necessary or use hinges and fix doors. It's going to look so much better when it's done...........
I did this by framing out the wall, using bead board and a piano hinge and magnetic closers. That way I have quick easy access when I need it. I only did top of wall above the floating shelf that I had built across that wall the year before

You can build a cover to hide the mess behind. You could do this with cardboard, or wood it will nee to be removable, so keep it light
I would hang a painted piece of lattice to cover the box. You can also hang something on the lattice to make it even prettier.
