Absolutely birds need more food then and are used to looking in familiar places, my porch is alive now with winter birds and my feeders get emptied often.
I leave mine up, and in fact feed them more, as it is harder for them in the winter. As the cost for bird food has gone up, I also buy cracked corn at a farm store which is much less expensive than bird food. Still have bird food, but stretch it with cracked corn - which the doves, little birds and cardinals love.
You can! THis way they'll have access to food in the sparser winter weather ;)
