Container gardening would be a good choice
I would make raised beds to garden - particularly vegetable gardens. You should be looking at soil level of 10-12”. Do an internet search for square foot gardening...there is a ton of information on soil mixes, how much to plant for the yields you want, how to plant and when....

I have a friend who let tomatoes grow down over a steep slope instead of staking them and tying them up. Might work, if slope is not too tall.
Hens and chicks are great for rock gardens. Also, try different kinds of sedum.
