Hi Susan. Using the old boards would be fine. I would sand them and then stain. Then apply a few coats of poly over the top to seal them off.
That depends on what the boards were treated with. If they were heat treated you can use them but if they were chemically treated they cannot be used in a food area.
If your fence is Cedar, it will damage more easily because it is a soft wood. But if your Island doesn’t get heavy use you might be able to use the softer wood and it would be beautiful!

Certainly you can repurpose your fence boards! You may need to sand and add some permanent paint or polyurethane to them.
Only if they have not been pressure treated or treated with a pesticide to keep away bugs..
pressure wash them really well, and either sand or plane to remove the really rough surface... Use several coats of a quality FOOD SAFE clear sealer.
First of all, what wood is your fencing?
IF it’s a Hardwood, with the proper treatment, YES!
