How much of the buried roots should I remove to plant to plants?

some of them are very large and have to be cut

The holes should be dug twice the size of the pot.
I have always been told that if the plant is lets say 3' tall you must dig 6' of all sides to make sure you don't cut off any major roots. This is just a rule of thumb.
