How about a piece of nice wood like butcher block to use for chopping
What is the countertop made off? You could make a template and fill the opening with the same material. May not look pretty but you can paint the countertop.

I would fill that area in with either a butcher block or stone tiles tht would be heat tolerant. A place where I could set hot pots and pans.
Add a second sink, like a bar sink or veggie sink, or full size to add for help if hubby likes to cook too.

What Kathy Miro said. A built in chopping board. If you add handles to the top, on 2 ends, you could lift it out for easy cleaning, as well as use it as a tray.
put molding around the inside of the old cook top cut out no make it look nice then put a trash can under it the you have a nice place to put any kind of scraps .
