What top clear coat I should use for painted kitchen countertop?

Spar varnish. Two or 3 coats

Varnish has a yellow cast to it and will yellow over time. Three coats of a water based polyurethane. Does not yellow.

Water-based polyurethane, with several coats will be easily wipe-able and durable.

  Yes, I love water-based poly. Varathane's waterbased poly in matte is one of my current favorites--if you don't like a sheen. It's very durable.
