Unless your sink was formed as a continuous part of your countertop & is quartz as well, Then yes, i see no reason why it can't be replaced.
I take it from the set in a quartz counter top that it is a drop in sink. That is the easiest to replace. Just make sure the replacement sink takes the same size hole that you have in the counter already.
If it is not part of the countertop then it can be removed with no problem. Doesn't matter whether it's surface mount or undermount.
