How can you level an uneaven stone fireplace mantel?

The mantel above my fireplace is made of multiple larege stones. It is very uneven, making it difficult to set items on it. What are some ways that I can make the top smooth and level?

Would installing thin slate tiles on top of the mantle and level the entire edge with mortar be an option ?Our wooden mantle has a lean too....but does not interfere with display. -

I like the idea of covering the mantel with a wooden mantel.
