Can I use white hardboard for risers?
I like the look of the white risers for wood looking stairs. The person that will be doing this has informed me that the wood on my stairs (carpet covered) doesn't fully reach the sides leaving a gap. Is there any reason why I should not use white glued on headboard sheets as risers?

If the gaps are not that wide no reason you can't. If the gaps are pretty wide glue in some wood strips to fill the gaps then the hardboard.
I used a 1/8 plywood and contact cement the spray on type.

You could use hardboard or MDF and paint that to suit!
