Tips on growing big onions? How do you store onions & potatoes?

Whether we plant seeds or sets, our onions never grow much larger than a very large clove of garlic. What are you tips on success? How do you store both onions and potatoes LONG TERM - 6-8+ months - without canning or dehydrating? Thanks!
