Hydrangea should not be pruned until the spring season starts and the new growth emerges making it easier to find the dead wood and preventing cutting off the flowers.
In a nutshell, no, they don't ... however, there are many varieties of Hydrangeas. Some form NEXT year's bloom on this year's wood, therefore, if you cut/prune the shrub down in the Fall, you may very well be removing next year's blooms! On the other hand, there are other hydrangeas that do not set next year's blooms on this year's wood and you can reduce the size of the shrub without any problem. Try and find out what types of hydrangeas you have and you will have your answer. There is a vast amount of information on Google helping you to identify if you have: "mop heads", "lace-caps" or "oak-leaf hydrangeas". Good luck.
PS: I neglected to mention there are now species of Hydrangea that bloom on new AND old wood so, perhaps, you are lucky and have this type already. "Endless Summer" is a hydrangea that blooms on both old and new wood.
