There are a few ways you can do this.
1. Separate food items by category, i.e. meat, fish, poultry, treats & store in bins.
2. If you menu plan, you can separate your frozen food by week.
3. Always date items by when they were frozen Frozen foods have a shelf life, so sort by the 'use by' & rotate for 'First In/First Out' usage.
4. Mount a whiteboard/chalkboard on or near the freezer. Record/date what you have on hand. Be sure to update as you use & add items.
This is what I did....bought Dollar Store containers to try and organize my upright freezer. It's worked perfectly. I kept saying "I know what's in there" and when I was doing this project, so many times I said "oh gosh, I didn't know I had that".
The bin idea works well to organize by catagory. Works for upright and chest freezers
