If it goes around the pool then you need to cut of the part that goes around the pool put up a new rail across the back and re-stain it. sorry that's the best answer I've got.

How about leaving as is and planting a tree smack dab in the middle of the area where the pool used to be. Fill in around tree with mulch or stones and a few annuals for color.
You could extend the pool decking and make it into a deck in your yard. Add nice stairs to it, maybe a pergola to cover part of it and potted plants and furniture to finish it. You could perhaps put some shrubs or plantings around the lower edge and put in shade loving perennials that would spread underneath where the pool was.
I like the idea of the tree in the middle. I have a similar set up, except I built a top over the pool part, about 8' above the top of the pool. It's actually an octagon shaped structure. I thought that if ever I do away with the pool, I'd leave the deck and convert the structure into a simple green house, using the deck and steps for different layers of plants, sort of like another room.
Cut off the posts supporting the deck and lower it. Build a rock garden with a fountain and pond where the pool was. Then set up an outdoor movie screen and invite the neighbors to movie night.
