You can paint it. Off white would brighten the walls up.
I bought a house that has lots of paneling. First I cleaned them, then wiped down with STP, painted with good primer then painted. I only did accent walls. It's been 2 years now still like it. Next, one wall in bedroom I'll use wall paper, took a while to find the right one.

Fill in any cracks with joint compound and smooth it. Scuff sand the entire wall to be painted, and clean it with tack cloth or damp rag. Use primer or a primer-containing paint for the final finish.
My mom has had paneling in her home since she built it in the 70s. She finally got tired of it a few years ago and filled in the cracks with wood putty , let it dry overnight then lightly sanded all of it. Wiped it down , primed it and painted it a beautiful eggshell . It looks like a whole new house .
You can fill the lines with a scraper trowel (metal or plastic or heck even an old credit card will work) and spackle, (aka sheetrock mud) let dry overnight or until it's all the same color with no darker spots which may only take a few hours depending on how thick you have to fill your grooves, then sand or use a damp sponge to smooth out the surface. Spackle shrinks as it dries so you might have to repeat the above steps. If you try to put spackle on to thick it will crack as it's drying. Once your panel grooves are filled and smoothed you can paint or paper your walls as you like! For the smoothest surface I recommend using a damp sponge first let dry then go back over lightly with fine sandpaper. You'll never know you ever had paneling.
