I have blankets that I toss over the back seat, easy to toss on, easy to remove, easy to wash. I also have a rubber brush that works great on almost any surface to get the hair off of things.
1. Bring a sheet along, and cover the cover with that. It's easy to take on and off, and protects passengers from dog hair. You can even clip it in using a few binder clips.
2. I have a rubber bristled dog brush I got from Petco that really, effectively removes hair from any upholstery or clothing with minimal effort.
I bought a rubber brush I use for the cat hair around my house. Also just using a damp cloth will make a quick clean up off upholstery. Some times to covers are just more hassle then they are worth in my opinion. I'm just not a gadget gal for those types of things. Now if your talking sewing. I have a few.
Use a damp cloth or damp rubber gove to get most of it, then use a lint roller to get any remaining hair left. The more often you clean it the easier it will be.
Gaffer or really sticky tape will do it!

Use a rubber dishwashing glove. Rub it on the upholstery and it will come right off.
I use a twin fitted sheet to cover my back seat when I take my dog for a ride. It tucks in nicely and is so easy to wash.
