Weeds are a fact of life. Kill them with epsom salt and boiling water. Or just walk around with kettles of boiling water, I do 2 kettles a day. If you have larger areas, you can use vinegar, but be careful, it will kill everything.
i heard that a mixture of bleach and water should do the trick.
I had the same problem with a sloped part of my yard that I wanted rock and vines, but the weeds thought I had created the area for them. After fighting it for a year or more, I removed all the rocks put down some screen that blocked UV and added back the rocks. I gave up on the dirt at that time and concreted them in place. I went by that home about 20 years later and the rocks are still in place and no weeds, but no cute vines either.
If you did not concrete and used some dirt you could place plants and any weeds would be easier to remove because the soil would be shallow.
If they are in the gardens and lawn all you can do is boiling water,as using any chemicals or vinegar will kill the surrounding plants and grass.
If you are absolutely sure you don't want to ever have anything grow in that area, you can add salt to the vinegar mixture.
