Go online and enter "pickled green tomatoes" in your search bar. After you have selected your preferred recipe for those, do the same with chow-chow. Remember to use the quotation marks; otherwise you'll get everything that has ONE of your search terms in it.
I found a chow chow recipe in my 1937 Household Searchlight recipe book. I will email it to you if you wish.
www.huffingtonpost.com has an excellent recipe for green tomato dill pickles . They are cold packed so stay nice and crunchy.

Prep Time: 10 min Inactive Prep Time:20 min Cook Time:35 min Level: Easy
Serves: 4 to 6 servings
Ingredients
Directions
Combine vinegar, sugar, dry mustard, turmeric, mustard seeds, celery seed, cayenne pepper, and ginger in a large pot and bring to a boil over high heat. Reduce heat and simmer for 5 to 10 minutes to extract the flavors of the spices. Once the liquid is boiling and steaming add tomatoes and onion. Gently stir to incorporate. Reduce heat and simmer for 20 to 25 minutes. Shut off heat and allow it to cool to room temperature. Place in a serving bowl and serve.

Fanwood Chow-Chow
1 peck ripe tomatoes 1 t whole cloves
2 chopped onions 2 c vinegar
2 T salt 1 1/3 c brown sugar
1T celery seed 1 T broken stick of cinnamon
2 apples, chopped 1 T mustard
1/4 t red pepper
Scald, peel and slice tomatoes. Chop onions. Sprinkle with salt. Allow to stand 2 hours. Drain. Add apples and boil slowly for 2 hours. Add vinegar, brown sugar, mustard, red pepper, celery seed, cinnamon and cloves. More salt may be added if desired. Simmer about 1/2 hour.

Note: the tomatoes
are cut in chunks, not diced, but the onions are diced.
Ingredients
a.. 2 gallons (or) 16 cups green tomatoes, cut in pieces
b.. 1 qt. (or) 4 cups Onions, peeled and chopped
c.. 2 cups jalapeno peppers, seeded and chopped
d.. 1/2 gallon (or) 4 cups white vinegar
e.. 6 cups sugar
f.. 1 cup salt
Directions
Mix all together. Bring to a boil in a large pot. Fill canning jars, seal. Put into a water bath.
Do not overcook
